I have started over on Land 7 several times now, I can't seem to get enough troops to go out and capture the Japanese cities before they start hitting me with earthquakes.  What is the best way to just breed and create huge armies?  What buildings are necessary and which can I skip making?

You don't  need any troops if you have a tough creature just target the enemy wonder from the start of the level.
Tactic 2.... Take the nearest villages ASAP using "good" tactics if you have to this will keep the Quakes away from your main village.
Tactic 3....Expand your influence by building wonders. The Quakes are cast outside your influence ring/s so it can  help lots.

you can also use storehouses to expand the influence ring and they only cost 1500 wood.

save your ore for when you need it for other buildings.

however with enough wood and ore you can build a bunch of sirens and win the land with impressiveness.

Playing Land 7 as Evil? That's pretty easy because I'd just remodded the nurseries and houses which can give lots of viagras and sleeping bags for villagers. And no worries, I just build up 400-500 swordmen platoons, 150-200 archers' and 12 catapults into linked armies. The last thing I know is the whole land is owned by me. Damm, pretty high flame, isn't it.

But, if not remodded it. I still got some tactics that I used before remod:
Step 1: Build an Altar ASAP and bring lots of worshippers (You want to know why, isn't it?)
Step 2: Build a Nursery and locate it as the center of your suburb. Then place as many Hovels as you can (This is the coolest houses when playing Evil, little space, little wood, but provide huge living nests. Maybe, bad if you're Good). But, make sure all of your houses inside the influence of your Nursery and make a troupe of Breeders (Choose man is the best, can make lots of women became mothers at the same time)
Step 3: Build a Granary next to your Warehouse and start spamming the fields to pump up the productivity. The more productive the Granary is, the more food you will get after your farmers put your finest crops into the wares.
Step 4: Build a multiple of Smelters next to your Warehouse. I recommend you build them up near the mine, and make them as the industrial area for your City (The more workshops, the more productivity and space for your Refiners. So good!)
Step 5: Take a look into the Japanese. If they finished the Quakes Wonder, choose a fully-growned tree inside your ring (Or leash your creature to get it). Then burn it with your Fireball. While the tree is burning, grab it up and hang it on the top of the Quakes. And you're just sitting there and watch Japanese' greatest plan of decades degrades itself, as long as the tree on fire.
Step 6: Build Lumber Mills at your Industrial Area, and quickly build Armories. Use your Creature to stop raiders' advance, or lure their Tiger out of his messing business. Make sure you finished building Armories ASAP, because you'll have to deal with Mine Monster.
Step 7: Build two Warehouses next to the old one, and continue with Granaries and spamming fields again. The East and North part of your town is blank, which can give you great advantages for farming. Build at least two Grannies' next to each Warehouse and spam for them 10 fields. This is for your future armies. When your houses stuffed with people, just build another suburb. Newly-built Warehouses provide you great expansion and the unplaced is very good. Just building like Step 2 and patiently wait for your future soldiers growing up. Don't worry about any possible raiders. Your Creature can handle it easily.
Step 8: Nothing after then, just get armies and deal with those two brothers for good. I suggest you attack the left city first due to they build raiders frequently (If you're not burn the Quakes or they repaired it, just send another burning tree to them). Keep your Creature at Town to fight back the Tiger or making yourself a Roasted Tiger by Fire Miracles. When at the war, just let your catapults smash the walls first and get your troops out of firing range of both archers and Japanese' catas'. When walls are down, also the archers, it's the good time to test how fine your swords are with their slowpoking catas. Linked the swordmen with archers very effective against enemies.
Step 9: You Rule!

Good luck, my friend! And be an extremely Evil as you can. Muhahahaha...
